So, so many super-rad things happened this week!! Too bad none of them were in my kitchen.

But yeah, the kitchen flops were hardcore. The most depressing part? They were all meat dishes. Specifically, they were all meat dishes meant to feed us for multiple meals, so it was an entire week of sub-par food. How have I survived????
Three words: Blueberry Pie Smoothies.
My first obvious question was: ‘Do they really taste like blueberry pie, or is this a ruse to get me to eat things like raw kale and chia seeds by tossing in the word ‘pie’?’ [Full disclosure- I love kale and I’m not even that in love with pie, but I’m TOTALLY not into greens disguised in sweet foods… and I’m TOTALLY in love with a breakfast items that say they taste like pie. It’s the ABCs of me.]
The answer: not a ruse. These Blueberry Pie Smoothies really do taste like pie. And they are AMAZING.
Unlike some recipes that tell you to put a piece of frozen pie in a blender + milk and press start (UGH, that makes me so mad!!), these are made from scratch with foods worthy of the task of starting your day, all with minimal added sugar. A really, really gorgeous treat when you want to mix up your eggs-for-breakfast routine.
Parents: if my kid is any indication, your kids will devour these like a T-Rex finishing a juice cleanse.
Blueberry Pie Smoothies may have been my only kitchen success this week, but what a win. Oh my gosh, have I properly conveyed how amazing they are? They were like a salve to the wound left on my heart when my garlic-and-rosemary-stuffed pork loin turned out dry and lackluster. A wound as fresh and cavernous as that requires two things: pork loin redemption (I’m coming for you, loin- you won’t fail me next time)… and a smoothie that tastes like pie.
- 1¾ cups milk
- 1 cup frozen blueberries
- 1 banana
- ¼ cup old fashioned oats
- ¼ cup pecans, toasted and chopped
- 2 T shredded, unsweetened coconut
- 2 T pure maple syrup
- ½ tsp pure vanilla extract
- ½ tsp ground cinnamon
- Pinch of ground nutmeg
- Blend everything in a blender. Buzz, buzz; sip, sip; be in heaven.
10/2014 update! I am true to my word and I DID try this with 1T maple syrup (reduced from 2) and also leaving out the oatmeal if you want to go grain-free. Still SO delish.
