Ultimate Grilled Cheese

Dear Penn State Football,

 

Your loss against the Gators was not my idea of how 2011 should start. Luckily, we had fabulous appetizers, Ultimate Grilled Cheese sandwiches, and enough champagne to wash away any

negativity and help us forget the fact that the Big 10 did not win any of their bowl games. We live in SEC territory– how do you think that makes us feel? Please work on things for next year.

True, a win would have been nice, but nothing could have ruined our New Year’s Day 🙂 Great time with friends, great food, and great mimosas. Rounding out the experience was the fact that our friends had leftover champagne from their wedding this summer, and wanted to know: would we be interested in taking a few bottles off their hands?

Does the Booze Hound throw things at the TV when the Canadiens score a goal against his

Bruins? Yes, and yes. 2011 is looking to be a pretty awesome year 🙂 Exhibit A –>

Despite the fact that the blogosphere will be swarming with all kinds of healthy recipes in a matter of days, I wanted to celebrate the arrival of 2011 in full glory. And full fat. So glad that my friend is a fellow foodie and whole-heartedly agreed with me. It is a celebration, after all, and celebrations aren’t meant to be low-cal 🙂

 

Barefoot Contessa’s Ultimate Grilled Cheese might be the best sandwich I’ve ever had. As if adding bacon to a grilled cheese (two kinds!) sandwich isn’t sinful enough, BC spreads an ethereal mix of mayo, mustard and parmesan on the inside of each one. I know– mayo on a grilled cheese would never appeal to me, but it totally works. You’re selling yourself short if you don’t add it!


2011 may still be in its infancy, but so far I’ve had the Ultimate Grilled Cheese sandwich, spent a fabulous day with some fabulous friends, and inherited 3 gratis bottles of champagne.

It’s gonna be a good year!

Ultimate Grilled Cheese

Adapted from Barefoot Contessa
Serves 6
12 slices thick-cut bacon
3/4 c good mayonnaise
3 T Dijon mustard
1/4 c freshly grated Parmesan cheese
1 1/2 tsp Kosher salt
1/2 tsp freshly ground pepper
1 loaf of sourdough or artisan white bread, sliced 1/2″ thick (12 slices)
6 T salted butter, at room temperature
6 oz aged Gruyere or Comte cheese, shredded
6 oz extra sharp Cheddar, shredded
1. Preheat oven to 400 degrees F. Arrange the bacon on a baking rack set over a sheet pan in a single layer and roast for 20-30 minutes, until nicely browned. Drain on a plate lined with paper towels and cut in half.
2. Meanwhile, combine the mayonnaise, mustard, Parmesan, salt and pepper in a small bowl. Lay 12 slices of bread on a board and spread each one lightly with butter. Flip the slices and spread each one generously with the mayonnaise mixture.
3. Combine the cheeses in a bowl. Distribute the bacon evenly on half the slices of bread. Pile 1/3 c shredded cheese evenly on top of the bacon and top with remaining bread slices, sauce side down.
4. Meanwhile, heat an electric panini press or grill pan. When the press is hot, cook the sandwiches for 3 to 5 minutes in batches until the bread is toasted and the cheese is melted. If using a grill pan, cook for approx 3 minutes on the first side, then flip and place a heavy pan (cast iron skillet works best) on top of sandwiches to give them the pressed look. Allow to cool for 2 minutes, then cut in half and serve warm.

Forget the healthy turkey soup – I want the grilled cheese sandwich!! Everything’s better with bacon…and champagne.

Um, we were so bummed they lost it made the whole day just ugh! Looks like you guys had just the right food around to make eveything better!

BTW- I had a grill cheese too on New Years Day! Not one like this though!!!

That is a very seductive sandwich. A group of bloggers – I think in Portland – did a grilled cheese party during the holiday. They, too, had a great time and great sandwiches. I hope you have a wonderful day. Blessings…Mary

Sometimes I have grilled cheese cravings that just can’t be met by a run of the mill sandwich – this would definitely cure me!! It looks insanely good – I wish I were having it for dinner!

Healthfood, schmealthfood, I’ll just up the exercise quotient! These look divine and I just bookmarked it. It reminds me of our favorite Monte Cristo a bit.
